香槟食品科学研究项目帮助学生运用科学与工程原理，确保食品数量、质量、多样性、食品外观以及安全。学生毕业后可在食品行业、学术界以及政府机构就业。
食品科学与人类营养学系教授研究领域十分广泛，包括食品化学、食品微生物学、食品加工/工程与人类营养学。其中食品化学领域，教授主要研究食品感官学、风味化学、食品储藏设备的控制、食品安全、毒理学以及食品的化学稳定性等内容。对食品和纤维微生物感兴趣的同学，可以选择专门从微生物层面对食品安全、品质进行研究，并利用纤维发酵技术制造生物燃料方面的教授。食品微生物学主要研究食品安全、食品生产、以及食品储藏。
对食品加工与工程感兴趣的学生可以选择专门研究热处理对脂肪、油类的影响、生物加工、顶尖的新加工技术工艺、热传导分析、流变学、超声加工技术运用、生产系统模型与优化、可生物降解的树脂以及塑料等方面的教授。
